Autumn fig and lemon cake

 

It’s autumn. It was my mom’s birthday recently and I also had a bunch of fresh figs from our garden, which I had to use somehow. I’m not a big fig lover generally – I don’t usually eat them fresh – but inside a cake, together with all the other flavors and ingredients, I admit that figs become delicious. I thus decided to mix my passion for cooking with the event taking place that day, and I turned my fig supply into a yummy birthday present for my mother.

 

RO: E toamna. Recent a fost ziua mamei mele si, pe langa asta, aveam si niste smochine proaspete din gradina noastra, pe care trebuia sa le folosesc cumva. In general nu sunt o foarte mare iubitoare de smochine – nu prea le mananc proaspete – dar intr-o prajitura, impreuna cu toate celelalte ingrediente si arome, recunosc ca smochinele devin delicioase. Am decis asadar sa combin pasiunea mea pentru gatit cu evenimentul din acea zi, si am transformat proviziile de smochine intr-un cadou gustos pentru mama mea.

 

 

Ingredients

  • 2 eggs
  • 2/3 cup sugar
  • 4 tablespoons unsalted butter, melted
  • 1/4 cup olive oil
  • 1/3 cup milk
  • 1 teaspoon vanilla sugar
  • 1-1/2 cup flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • zest of 1 lemon
  • 8-10 fresh figs, cut in halves

 

RO: Ingrediente

  • 2 oua
  • 2/3 cana zahar
  • 4 linguri unt nesarat, topit
  • 1/4 cana ulei de masline
  • 1/3 cana lapte
  • 1 lingurita zahar vanilat
  • 1-1/2 cana faina
  • 1 lingurita praf de copt
  • putina sare
  • zeama de la 1 lamaie
  • 8-10 smochine proastete, taiate in doua

 

 

In a large bowl, mix the eggs and sugar using an electric mixer, until they become thick and pale yellow. Add the butter, milk, oil and vanilla sugar and mix until blended.

 

RO: Intr-un bol mare, amesteca ouale si zaharul folosing un mixer electric, pana ce devin dense si de un galben pal. Adauga untul, laptele, uleiul si zaharul vanilat, si amesteca pana ce amestecul devine omogen.

 

 

In a separate bowl, mix the flour, baking powder, lemon zest and salt. Stir the flour into the egg mixture until they are well incorporated.

 

RO: Intr-un bol separat, amesteca faina, praful de copt, zeama de lamaie si sarea. Adauga faina in compozitia cu oua si amesteca pana devine omogen.

 

 

Bake the cake for 15 minutes, then arrange the figs on the top of the cake and bake for another 35-40 minutes. Serve with ice-cream.

 

RO: Pune la cuptor pentru 15 minute, apoi aranjeaza smochinele deasupra si pune la copt pentru inca 35-40 de minutes. Serveste-l cu inghetata.
